Sažetak

U ovom radu prikazani su rezultati istraživanja količine apsorbirane odnosno dodane vode u meso peradi s hrvatskog tržišta. Uzorci svježeg pilećeg i purećeg mesa (n = 36) uzorkovani su tijekom 2016. i 2017. godine s različitih poljoprivrednih gospodarstava, obrta, industrija i trgovačkih lanaca na području Republike Hrvatske. U svakom uzorku računskim putem određen je omjer ukupne vode (WA) i ukupnih bjelančevina (RPA). Određivanje navedenih parametara i interpretacija rezultata provedeni su u skladu s Uredbom Komisije (EZ) br. 543/2008 od 16. lipnja 2008. o utvrđivanju detaljnih pravila za primjenu Uredbe Vijeća (EZ) br. 1234/2007 u pogledu tržišnih standarda za meso peradi. Za određivanje navedenih parametara primijenjene su akreditirane standardne metode za određivanje ukupne vode i ukupnih bjelančevina. Od ukupno 36 analiziranih uzoraka, sedam uzoraka koji čine 19,4 % od analiziranog broja uzoraka, nije udovoljavao obzirom na najveći dopušteni omjer ukupne vode i bjelančevina (W/RP) propisan Uredbom 543/2008 po vrstama komadnog mesa peradi. Dobiveni rezultati upućuju na mogući dodatak vode u procesu proizvodnje svježeg mesa peradi te nužnost sustavne kontrole s ciljem osiguranja kvalitete i pružanja potrošačima nedvosmislene i objektivne informacije o proizvodima koji se nude na prodaju.; The amount of water added in poultry meat from the Croatian market This paper presents the results of amount absorbed or added water in poultry meat from the Croatian market. Samples of fresh chicken and turkey meat (n = 36) were sampled during 2016. and 2017. from various agricultural holdings, crafts, industry and trade chains in Croatia. In each sample, the ratio of total water (WA) and total protein (RPA) is calculated. Determination of above parameters and interpretation of results were in accordance with Commission Regulation (EC) No. 543/2008 of 16 June 2008 laying down detailed rules for the application of Council Regulation (EC) No. 1234/2007 as regards the marketing standards for poultry meat. Accredited standard methods were applied for determination of total water and total proteins. Out of 36 analyzed samples, seven samples which are representing 19.4% of the total number of analyzed samples, was not comply with maximum allowed ratio of total water and protein (W/RP) prescribed by Regulation (EC) No. 543/2008 for poultry meat. The results of this research indicate on the possibility of water addition in the fresh poultry meat producing process and also need for the systematic control with the aim of ensuring quality and providing consumers with objective information of the market products.; Zugesetzte Wassermenge im Geflügelfleisch am kroatischen Markt In der vorliegenden Arbeit sind Ergebnisse der Untersuchung der aufgenommenen bzw. der zugesetzten Wassermenge im Geflügelfleisch am kroatischen Markt dargestellt. Die Proben von frischem Hähnchen- und Putenfleisch (n = 36) wurden im Laufe der Jahre 2016 und 2017 bei unterschiedlichen landwirtschaftlichen Betrieben, Gewerbebetrieben, Industrien und Handelsketten auf dem Gebiet der Republik Kroatien entnommen. Bei jeder entnommenen Probe wurde das Verhältnis vom Gesamtwassergewicht (WA) zum Gesamtproteingewicht (RPA) rechnerisch ermittelt. Die Bestimmung der angegebenen Parameter und Auswertung von Ergebnissen wurden in Übereinstimmung mit der Verordnung (EG) Nr. 543/2008 der Kommission vom 16. Juni 2008 über die Festlegung von Detailregeln für die Anwendung der Verordnung (EG) Nr. 1234/2007 des Rates hinsichtlich der Vermarktungsnormen für Geflügelfleisch durchgeführt. Zur Ermittlung der angegebenen Parameter wurden akkreditierten Standardmethoden für Bestimmung des Gesamtwassergehalts und Gesamtproteingehalts verwendet. Unter den insgesamt 36 analysierten Proben waren sieben Proben, die 19,4 % der analysierten Anzahl von Proben ausmachen, unter Berücksichtigung des in der Verordnung Nr. 543/2008 nach Geflügelteilstücken vorgeschriebenen höchstzulässigen Verhältnisses vom Gesamtwassergewicht zum Proteingewicht (W/RP-Verhältnis) diesbezüglich nicht zufriedenstellend. Die gewonnenen Ergebnisse weisen auf mögliche zugesetzte Wassermenge im Prozess der Herstellung von frischem Geflügelfleisch sowie auf die Notwendigkeit einer systematischer Kontrolle hin mit dem Ziel, Qualität zu sichern wie auch unzweideutige und objektive Informationen über die zum Verkauf angebotenen Produkte an die Verbraucher zu geben.; La cantidad del agua añadida a la carne de aves de corral del mercado croata En este trabajo fueron mostrados los resultados de la investigación de la cantidad del agua absorbida y del agua añadida a la carne de los aves de corral del mercado croata. Las muestras del pollo y de la carne de pavo (n = 36) fueron tomadas durante el 2016 y el 2017 de diferentes granjas familiares, empresas individuales, industrias y cadenas de tiendas en República de Croacia. El peso total del agua (WA) y el peso total de proteínas (RPA) fueron determinados a través del cálculo. La determinación de los parámetros mencionados y la interpretación de los resultados fueron realizadas de acuerdo con el Reglamento (CE) N o 543/2008 de la Comisión de 16 de junio de 2008 por por el que se establecen normas de desarrollo del Reglamento (CE) no 1234/2007 del Consejo en lo que atañe a la comercialización de carne de aves de corral. Para la determinación de los parámetros mencionados fueron aplicados los métodos stándares acreditados para la determinación del peso total del agua y de proteínas. De un total de 36 muestras analizadas, 7 muestras, que son 19,4% de las muestras analizadas, no cumplieron en relación con los parámetros del peso total del agua y de proteínas (W/ RP), regulados por el Reglamento (CE) N o 543/2008 para los tipos de piezas de carne de aves de corral. Los resultados obtenidos indican a la posible añadidura del agua en el proceso de la producción de la carne fresca de aves de corral y a la necesidad de la existencia del sistema de control con el fin de asegurar la calidad y la información inequívoca e imparcial sobre los productos ofrecidos.; Quantità di acqua aggiunta nella carne del pollame proveniente dal mercato croato In questo articolo sono illustrati i risultati di una ricerca che aveva come obiettivo quello di stabilire la quantità di acqua assorbita o aggiunta nella carne del pollame proveniente dal mercato croato. I campioni di carne fresca di pollo e tacchino (n = 36) sono stati prelevati nel corso del biennio 2016-2017 da differenti aziende agricole, aziende artigiane, industrie e catene commerciali operanti sul territorio della Repubblica di Croazia. In ciascun campione è stato calcolato il rapporto di acqua totale (WA) e di proteine totali (RPA). Le operazioni di determinazione dei suddetti parametri e d’interpretazione dei risultati sono state svolte in conformità al Regolamento della Commissione (CE) n. 543/2008 del 16 giugno 2008 recante modalità di applicazione del regolamento (CE) n. 1234/2007 del Consiglio per quanto riguarda le norme di commercializzazione per le carni di pollame. Per determinare i suddetti parametri sono stati applicati i metodi standard accreditati per il calcolo dell’acqua e delle proteine totali. Su un totale di 36 campioni analizzati, sette di essi – ossia il 19,4% del numero complessivo di campioni analizzati – non hanno soddisfatto quanto disposto dal Regolamento n. 543/2008 circa il massimo rapporto consentito tra acqua e proteine totali (W/RP) per tipo di pezzo di carne di pollame. I risultati ottenuti rimandano alla possibilità di un’aggiunta d’acqua nel processo di produzione della carne fresca di pollame e alla necessità di controlli sistematici al fine di garantire la qualità e di fornire ai consumatori informazioni univoche e obiettive sui prodotti in commercio.
